Fish Cakes in a Flash
These days, my time in the kitchen is limited. As a vegetarian, I often crave a warm, hearty protein-filled meal, and this is one of my favorite quick and easy (and yummy) fish cake recipes - enjoy!
Ingredients:
2 cans salmon or tuna (remove all bones)
3 beaten eggs
Juice of 1/2 lemon
1/4 cup mayonnaise
1 onion diced
3/4 cup bread crumbs (or raw oats for a healthier alternative)
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon salt
Method:
Fry in pan with oil OR Bake until browned at 350 (~20 mins)
Tonight, I ate this with an oven-roasted potato and side green salad:
